... coli incident ongoing in europe, the annual food safety week is a strong reminder of the importance of following good food hygiene ... this year, food safety week is focusing on good hygiene in the home, which will help stop the spread of harmful bacteria ... at the same time, the agency is working closely with food businesses all along the food chain to reduce the risk of harmful bacteria reaching our plates ... to investigate what people think good hygiene is, in the run-up to food safety week, the agency asked more than 2,000 people across the uk whether they thought a range of statements about food safety were true or false – from the truth about 'use by' dates to the infamous ‘five second rule’ for food dropped on the floor ... the research showed that most of us are aware of good hygiene in the kitchen, but can still fall foul of some common misconceptions around food safety ... here in wales, just over half (53%) of us believe that we can tell if food is safe to eat just by its appearance or smell ... potentially dangerous food bugs like e ... coli and salmonella don’t always make food smell 'off' and do not affect the appearance of food ... four out of ten people questioned thought that ‘use by’ dates are put on food packaging to encourage shoppers to throw it out so they have to buy more ... in reality the 'use by' date is required by law and is an important indicator of how long a food will remain safe to eat ... one in ten of the welsh population questioned believe that if you drop food on the floor it is safe to eat as long as you pick it up within five seconds ... if there is one place your food is most likely to pick up bugs, it’s on the floor ... food hygiene ratings scheme launched in northern ireland

... councils across northern ireland are today rolling out the national food hygiene rating scheme (fhrs), designed to inform people about the food hygiene ratings of local food outlets ... ‘the scheme is a real opportunity for businesses like ours to showcase how seriously we take food hygiene ... ’ the scheme, which launched today at belfast's café vaudeville to mark the start of food safety week in northern ireland, rates the food hygiene standards of over 11,000 local businesses where people can eat or buy food, from cafés and restaurants to supermarkets and delis ... uk/ratings or simply look out for the striking green and black stickers and certificates inside food businesses ... the fhrs is operated by the food standards agency in northern ireland in partnership with 17 district councils throughout the region ... under the scheme, food businesses are rated on a scale of zero to five with zero meaning 'urgent improvement necessary' and the top rating of five representing a ‘very good’ standard of food hygiene ... below is an example of a sticker for a business with a hygiene rating of ‘5’ and 'very good' hygiene standards ... speaking at the launch of the fhrs, michael jackson, head of food safety and operations, food standard agency in northern ireland, said: 'the aim of the food hygiene rating scheme is to help people make informed choices around the purchase of food – wherever they eat or shop more

... good food hygiene is getting easier to spot in wales with the launch today of a bilingual advertising campaign from the food standards agency ... designed to promote awareness of the food hygiene rating scheme, the consumer advertising campaign runs in wales throughout march 2011 ... uk/ratings, where the food hygiene ratings can be found ... about the scheme the food hygiene rating scheme, which is is run by local authorities in partnership with the fsa, helps make it easier for consumers to choose places with good hygiene when eating out or shopping for food ... the rating tells them about the hygiene standards in restaurants, pubs, cafés, takeaways, hotels and other places they eat out, as well as in supermarkets and other food shops ... in wales, all 22 local authorities are implementing the scheme and as each food business is inspected by a local authority food safety officer, the business is given a rating ... at the top of the rating scale is ‘5’ – this means the hygiene standards are very good ... with this scheme, a simple rating on a sticker gives consumers the information they need to choose the places with the best hygiene standards when they eat out or buy food ... ... food safety week starts today, and with many people likely to have barbecues or be eating outdoors for world cup matches, the food standards agency is reminding everyone that food bugs can cause more misery than a penalty shoot-out ... good food hygiene is even more important than usual over the next few months, say the agency's food safety experts ... every year the levels of food poisoning soar during summer ... germs can grow faster if food is left out in the warmer temperatures, while eating food at barbecues and picnics can present additional risks such as cross-contamination between raw and cooked foods ... the food bug campylobacter, often present on raw chicken, is being highlighted as a particular concern ... a recent food standards agency survey showed that two thirds of raw chicken bought in shops had traces of campylobacter ... it is the most common cause of food poisoning in the uk, making more than 320,000 people ill a year ... bob martin from the food standards agency said: 'we all want to enjoy the summer and the world cup but, regardless of how well your team is doing on the pitch, food poisoning could really spoil the fun ... 'during summer we are all at greater risk from food bugs ... the warm weather means we have to take greater care not to leave food out of the fridge for too long and allow it to get warm; in warmer temperatures these bugs can grow at a faster rate, putting you and your family at risk ... eating at barbecues and picnics can also sometimes mean we are at risk from undercooked food or from bugs getting spread from raw onto cooked food ... ... cause for concern over food hygiene in the uk emerged last week when the uk food standards agency published the findings from the largest ever nationwide survey of the food hygiene knowledge of catering industry workers ... less than two thirds (59 per cent) of the catering workers questioned had a certificate in basic food hygiene and only 3 per cent of catering managers interviewed said retaining skilled, trained staff was important to their business ... the fsa reports that only 32 per cent believed good food hygiene practices were important to their business compared with 64 per cent who saw good food as the key to keeping their customers ... on a more positive note, the survey discovered that good food hygiene came top of the list of priorities for catering managers, with just under half (42 per cent) listing it as a key factor in the success of their business ... good food hygiene practices and clean surroundings were also named as important by staff, but only 5 per cent of catering workers and managers made the link between washing hands and personal hygiene, recognising it as something specific to take care of in the workplace ... sir john krebs, chair of the food standards agency, said: "this survey shows clearly that there are catering businesses that have high standards of hygiene and food ... "unfortunately, it also shows there are too many that don't know you cannot serve good, safe food, unless you also have high standards of food hygiene ... "many food poisoning incidents can be prevented through people simply washing their hands properly and at the right time ... " with perfect timing, the fsa this week launched the second phase of its five-year food hygiene campaign ... the food standards agency is focusing attention on small to medium-sized independent catering businesses in a drive to push up food hygiene standards in foodservice venues more
